Chocolate Chip Cookies

My Tried Recipe

Looks like few days, that have not updated my blog or put some new recipes. Today i tried some easy mud gooey cake recipe, that did turn out very soft, but not that goeey. But really yummy so had to post this recipe here. The recipe was from nigella lawson. Some of the conversion i have changed.


GOOEY CHOCOLATE CAKE

Ingredients:


Castor Sugar-125 gms
Butter-100 gms unsalted
All Purpose Flour-45gms
Butter-100gms
Cocoa Powder-4Tbsp
1 tsp Vanilla essence.
Eggs-2 or substitute with 2tbsp of energ egg substitue with 4 tbsp water

Method:

1.  Mix egg, sugar and butter and essence
2. Add the dry ingredients
3. Bake in a preheated oven at 175 degree C for 20 minutes.

**** Dust the cake pan with butter and flour or u can put a butter paper, so cake can be easily removed
**** Results might differ when you use egg substitute. Also, instead of egg 1/4th cup of yogurt with 1/8th spoon soda can be used too. Make sure the yogurt is not too sour as it will change the taste of the cake.
****This cake can be topped with fresh fruits cooked in sugar syrup and cooled. Sweetness can be adjusted according to your taste...






 Mango Eggless Icecream

Ingredients:

3 Cups Heavy Cream
1 Cup Mango Puree
1 Cup powdered sugar
1 tsp vanilla essence

Method:

1. Mix the mango puree, cream, sugar, and vanilla essence with a hand blender.

2. Freeze it in the freezer in a icream box

3. Churn the frozen icecream after 6 hours again with a hand blender.

4. Freeze it again.

Icecream  should be ready to be served in 6 to 8 hours. Serve with fresh mangoes on top or whipping cream.

BANANA WALNUT CAKE

Ingredients

4 Cup All purpose Flour
1 Cup Butter(unsalted)
2 Cup Sugar
4 Eggs(can use egg substitute Like Ener-G egg replacer 11/2 tsp with 2 Tablespoon of Water)
6 Bananas
1/2Tsp Baking Soda
11/2 Cup Walnuts
1 Tbsp Vanilla Essence
1 Tsp Nutmeg Powder

Method:

1. Mix the butter and sugar till it becomes light

2. Mix eggs one by one to the mixture.

3. Mix vanilla essence, nutmeg powder and baking soda.

4. Mix the Flour in two portions and mix it lightly till well mixed.

5. Add the bananas and walnuts mix lightly.

6. Dust the cake pan with butter and flour and bake the cake at 175 degree C for 1 hour. Please check if the cake is done, by inserting a toothpick, till it comes clean.

Note:

Can add chocolate chips to the cake
Can add cinamon powder to the Cake



WOW YUMMY ECLAIRS
Ingredients

1/2 cup All purpose Flour
4 Tbsp White Butter
1/8th tsp salt
2 eggs
1/2 cup water

Method

1. Bring the butter and water to boil
2. Add the flour and salt mixture and mix till it starts making a ball..
3. keep the mixture aside to cool down a little.
4. Add egg one at a time and mix it in the flour batter
5. Fill the mixture in a piping bag with plain nozzle or can cut a 1/2 inch thickness.
6 Pour it in a straight line about 3/4th inch long
7. Whisk one egg and brush some egg mixture on the eclairs.
8. Bake in a oven at 225 degree C. for 15 minutes and then at 180 for 30 minutes.
9. Bring the eclairs out and make couple of small holes so the hot air goes out and does not cause the eclairs to be soft and soggy.
10.Put the eclairs in the warm oven, that has been allready switched off.

Pastry Cream

I bought blue bird whipping cream and used as a filler. Fill it by putting the creme in the pipping bag with pointed nozzle.

Chocolate Ganache for dipping.

55 gms of semi sweet chocolate
1/4th cup  thick cream(can use dabur  whipped cream)

Method

1. Heat the Cream and add the semi sweet chocolate till it melts and mixes with the cream.
2. Dip the cream filled eclairs in the ganache and then refrigerate for few minutes and serve..

FUDGEY  CHOCALTE COOKIES


Ingredients

1 Cup All Purpose Flour
1/4th tsp Baking Powder
1/8th tsp salt
7 Tbsp Butter
5 Tbsp Cocoa
2/3rd Cup Castor Sugar
1/3rd Cup Brown Sugar
1/3rd Cup Brown Sugar
1/3rd Cup Plain Lowfat Yogurt or 1 egg
1/2 Cup Melted Chocolate
1tsp Vanilla Essence

Method:

1.   Melt butter on saucepan and after the butter has melted keep it aside.
2.   Add the cocoa,sugar,yogurt(or egg),salt and vanilla essence.
3.   Add the flour mixture(flour,baking powder,baking soda.)
4.   Mix everything together and drop it with a middle size icecream scoop 2 inches apart.
5.   Bake at 175 degree C for 10 minutes.

Note:  The cookies will be soft in touch so remove the cookie in 10 minutes.  They are fudge cookies so will be little cakey in texture. Store this cookie in refrigerator.




Simple Sugar Cookies


Ingredients

170 gms Flour
85 gms Butter
1/8th tsp Baking Powder
1tsp Vanilla essence
15ml Milk

Method:

1.  Sift the flour and baking powder
2.  Cream butter and sugrar till light and fluffy
3.  Add essence to milk
4.  Work in flour with hands using as much milk as necessary to make a pliable dough.
5.  Well out and cut even number of biscuits using a cutter.
6.  On half the number cut out the holes each with half inch nozzle
7.  Bake at 375 degree F that will be about 175 degree C for 15 minutes.

Note:  You can add cranberries or raisins to this cookies or dry fruits if you like.
           Sugar icing can be done on this cookies.
            Can sandwich this cookies with jam



Vegetarian Soft Taco


Ingredients for the Soft Taco.

2 Cups       All Purpose Flour
1 Tsp         Baking Powder
1 Tsp         Oil
1/4th Tsp   Salt
Water to bind the flour.

Ingredients for the filling.

2 Cups Paneer Cubes
4 Cups of Iceberg Lettuce in pieces
1 Cup Sour Cream
1 Cup Chopped Cucumber
2 Cup Salsa
2 Cup Cooked rice
1 Packet Taco Seasoning
2 Tbsp Tomato Puree(i used Godrej)
1 Tsp Chilly powder
Processed Cheese use according to your requirement.

Method:

  1. Mix all the dry ingredients for making the tortillas with enough water to form a dough.
  2. Roll the dough in to a shape of roti, but little thicker in size. Just cook two sides lightly..
  3. Place all the tortilla in a plate and cover it with a kitchen napkin. This will make your tortillas soft.
  4. Marinate the paneer with taco seasoning, chilly powder and salt. Stir fry after sometime and keep it aside.
  5. Cook your rice, and drain the water from it. 
  6. Take little oil in a vessel. Put the tomato puree, chilly powder, and taco seasoning and salt.
  7. Mix the rice in this gravy, and keep that aside too.
  8. Warm the tortilla in a microwave for few seconds.
  9. Assemble the tortilla with all the salad ingredients, rice, paneer and cheese, salsa and sour cream.
  10. Fold the tortilla in half and serve with salsa on side.


Note:

  1. Grilled chicken can be used instead of paneer
  2. Baked Beans can also be one of the filling in this, but it will be little sweet in taste.
  3. Kidney beans can be soaked and then boiled and can be mixed in this.
  4. If sour cream not available.. Tie yogurt in a muslin cloth and let stand for few hours till the water drains out.  Mix little fresh cream and salt and use as sour cream
  5. If Taco seasoning not available use our Chat masala.. Though the taste might be different. It taste good too...
  6. Do not cook this assembled taco on a fry pan with oil, like frankie...
  7. The tortilla recipe can be used to make thin tortilla for burrito and Quasedillas.
  8. This Tortilla can be stored in the refrigerator for 10 days. Do not leave it open in the refrigerator. Put it in a zipper bag or some container.. Do not fold it and store..

CHOCOLATE CAKE WITH CHOCOLATE TRUFFLE ICING.
Theme.. Frozen Elsa Cake..


Ingredients

1-3/4th Cups All Purpose Flour
1-1/2 Tsp Baking Powder
3/4th Tsp Baking Soda
1/3rd Cup Margarine
3/4th Cup Powdered Sugar
2 Tbsp Cocoa Powder
150 ML Milk
1Tsp Vanilla essence

Method:



  1. Sieve the Flour, baking powder, baking soda, and Cocoa powder.
  2. Beat the Sugar and margarine with the Vanilla essence.
  3. Add half of the Flour and half milk and beat till mix.
  4. Add the remaining half flour mixture and milk and mix well..
  5. Make sure you do not over mix.
  6. Line a 8 inch cake tin with butter paper or Rub the tin with butter and dust with flour..
  7. Bake in a  preheat oven for 35 minutes at 175 degree C.
  8. Oven temperatures differ please check the cake in 20 minutes.. touch the upper crust of cake if its still soft you still need more time.. once firm, pierce a wooden stick in the center and check if its done.. if its raw the stick won't come out clean..
  9. After removing the cake from oven, let it rest outside for sometime.
  10. Put a butter paper on a plate and turn the tin on it.
  11. Let the cake cool down, and if you icing the cake please let it sit in the refrigerator for a whole day...

TRUFFLE ICING..

Ingredients

3 Cups chopped Dark chocolate
1 Cup chopped Milk chocolate
2 Cups Cream
2 Tsp Salted Butter

Method.

  1. Mix all the ingredients on slow flame and mix properly.
  2. Remove it from the stove and keep it aside.
  3. Let this mixture cool aside outside for the whole night.
  4. The melted chocolate will cool down and will become spreadable..

Making Sugar Syrup to soak the chocolate cake.

1 Cup Sugar
4 Cups Water

Heat the water and sugar and boil the water till the sugar gets dissolved..
Let the water cool down..

Method to assemble the Cake..

  1. Cut the cake in the middle in equal two parts..
  2. Put the sugar water with a spoon on one part of cake.
  3. Soak it really good in this water..
  4. keep both the parts of the cake in the refrigerator.
  5. Spread the chocolate icing on one part of the cake.
  6. Put the second part of the cake on it and soak that part in sugar syrup too.
  7. Cool it again and then spread the remaining chocolate icing on it and the sides.
  8. Decorate with Sugar sheet like i did here.. It can be printed by a printer with edible ink and edible sugar sheet.
  9. Decorate with fondant roses or figures you like..









Chocolate Truffle Cake again..
